Paleo Bread with Almond Meal

Have you decided to make changes in your health?  

Are you ok about cutting out the many inflammatory foods?

There are many paleo bread recipes out in cyber space and even a few paleo breads popping up in local stores.

This is the perfect alternative to bread.  

A quick and simple bread made with almond meal, eggs, apple cider vinegar and bicarb soda.  So simple that it does not require yeast, proving or any bread making skills.

Simply slice and freeze and enjoy as toast for breakfast or a simple sandwich.

Paleo Bread with Almond Meal

Ingredients
3 cups almond meal
½ cup tapioca flour
⅓ cup chia seeds
¼ cup coconut oil - melted
4 eggs
1 teaspoon bi-carb soda
1½ tablespoons apple cidar vinegar
¾ cup water

Method
Pre-heat the oven to 200C.  Line a small bread tin with baking paper.
Combine all ingredients in a food processor or stand mixer and beat for at least 2  minutes until a light batter forms.
Scrape the bread mix into the prepared bread tin and bake for 20 minutes.
Turn the oven down to 170C and bake for a further 40 minutes.
Cool for 15 minutes before removing from the bread tin.  
Remove bread from the tin and cool on a wire rack completely before slicing and serving.
Slice and freeze or store in an airtight container in the fridge for up to 3 days.
